Empezaremos esta serie de pequeñas entradas sobre la historia de nuestros platos con uno que casi con total seguridad habéis probado todos: las migas. Se elaboran de muchas maneras, en muchos puntos del país, pero en Aragón es de esos platos más típicos precisamente por nuestro pasado y presente rurales.

Su origen, según diversas teorías, se remonta a la invasion árabe, y sería una variante del ‘tharid’, una sopa con base de miga de pan e ingredientes adicionales como carne o verduras, el cual se dice que era el plato favorito de Mahoma, lo que causaba que la receta se preparara en eventos especiales o como obsequio a importantes invitados, y no como un plato de diario.

Posteriormente, durante la Reconquista, las migas siguieron siendo muy populares entre los reyes cristianos, con la diferencia de añadir productos de cerdo para distinguirse de las creencias musulmanas.

A pesar del inicio aristocrático que hemos comentado, el plato se popularizó en el mundo rural, en especial entre pastores, por su facilidad de preparación. Llevaban pan en las zamarras siempre que salían al campo, y cuando éste se quedaba duro, lo humedecían y sofreían en grasa de animal. Esta es la receta más aragonesa, con sebo de ternasco como ingrediente principal, la cual lo ha convertido en un referente de nuestra gastronomía.
