como son las pochas, una variedad de alubia blanca que se consume tierna. Estas legumbres surgieron de la poca disposición de los vascos y navarros por consumir la alubia blanca que cultivaban los árabes en Andalucía. Allí gozaba de gran aceptación, pero en el norte no se esperaba a la maduración ni se conservaba para consumir el resto del año. Las recogían y las consumían antes de su maduración, por lo que la convirtieron en un
producto sólo de temporada. ¿El resultado? Una judía similar a la alubia pero que proporciona una textura y posibilidades distintas tanto para primeros, segundos, platos fríos, calientes, …

Nuestro plato se elabora cociendo la pocha, a la que añadimos un alioli casero y mezclamos todo, emplatamos y sobre la pocha colocaremos pulpo cocido y fileteado, aliñado con aceite de pimentón y perejil. Es un plato de contraste, y no ligero, no os dejéis engañar por la apariencia sobre su tamaño, porque llena más de lo que parece, y combina la consistencia de las pochas con la suavidad y el aliño del pulpo para dar lugar a un plato muy sorprendente.
