La borraja es una hortaliza de excelentes cualidades, pero muy poco conocida y utilizada, entre otras cosas por el trabajo que conlleva su limpieza y manejo, ya que es preciso quitarle los pelillos que recubren sus hojas y tallos antes de consumirla.

Aunque la conocemos de sobra en Aragón, en otras regiones no es para nada tan popular, y hasta es posible que no sepan de qué habláis si la nombráis. Es originaria del norte de África, y fue distribuida por la Europa mediterránea y Portugal e introducida en Europa central y sudoriental. En España su uso se extendió por todo el territorio, siendo menos utilizada en las zonas del norte, excepto en la Ribera del Ebro, donde es muy apreciada, y hace posibles muchas recetas, desde el clásico plato hervido con patata, sal y aceite, hasta los crespillos de borraja, pasando por uno de los protagonistas de nuestro menú, el timbal. Como podéis ver, encaja muy bien con embutidos, y permite presentarla tanto en platos fríos, como en calientes, como en tapas más originales.

Es un alimento sano (por sus propiedades depurativas, descongestivas, diuréticas y antiinflamatorias, entre otras), sencillo y sabroso, que suele gustar, y sobre todo sorprender si no se conoce. Os recomendamos utilizarla más a menudo, y por supuesto venir a probarla a nuestro restaurante.
